Santa put a jar of Carrot Cake Jam in my Christmas stocking this year. It tastes just like carrot cake! Resisting eating it by the spoonful, I've been having one piece of toast per day with this delicious spread. I've added it to my list of jams to make in 2012. Mo, if you've got a juicer, I'm sure the recipe could be tweaked to serve in a glass You too Penny? ;D I should post my favourite carrot cake recipe; it's easy and it makes a 9X13 pan...

I will also make this jam! We always have tons of carrots. Plus this will make a nice gift. However it will have to go in one of my normal jars..I got some fancy ones for Christmas this year. They are a German jar & really nice. Id have to charge a fortune for them if I sold anything in them..

Santa just brought it to me in a jelly jar. How I'm going to save that until carrot season next fall is beyond me? But I suppose there will be all manner of other flavours in the meanwhile. I'm so happy to have shared this; look how many pholks saved the recipe

Cool thanks......I cannot bake to save my life ;D....i think its because every weekend we were in an Arena either for hockey or lacrosse ....Brad does the baking here when he has the time, and his carrot cake is to die for , he made one for a party we went too, and the owner of a bakery was there, and wanted him to make some for his bakery......he has no time at all to do that......and you sure as heck dont want me doing it

yeah but Penny, look at all those gorgeous crafts that you make for your yard. We each have our own talents and that most definitely is where your talent lies. You should see my try to coordinate bacon, eggs and toast for breakfast Whaddya mean Overeasy doesn't mean Overcooked?? Phil, actually these bagels were from frozen dough Hubs was given. I found a recipe online for bagels from scratch, then just boiled and baked the frozen dough accordingly. But I saved the recipe to try when I run out of the frozen ones. I used to make ALL of our own bread by hand but with him driving a Semi and being gone so much, I can't eat homebaked bread before it goes hopelessly stale and furry.
