Just put up 2 batches of Elderberry jelly last week and then Elderberry/apple Need to make Elderberry/grape next week. Here's a recipe Strip the berries from the barnches by useing a fork. put into enamel or a non metal pot and cover with water,mash with potato masher then bring to a biol. strain thru cheese cloth . Measure 1'1/2 cups sugar 1 1 pint of juice bring to a boil ,stirring continuously until all the sugar is disolved. then biol hard for 10 minutes or until the juice jells on the spoon when held in the air. skim,and pour at once into jelly jars,seal and water bath for 15 minutes.

I love Elderberry wine and jelly....but the wine is best

Covering elderberries with water will reduce the acidity to a point where you should really add some lemon juice to be safe. It will jell but might not be safe to eat. Don't want to be a buz-kill, just think about it.
