We have a boatload of jalapenos coming ripe. What do I do with 'em? How do I dry them (dont say dehydrator)? How do I make them into a hot sauce> What else can I do to 'em? Can I freeze 'em somehow? ? jelp!

Wrennie, Hot sauce would use a few, but very many would make lots of sauce. I dry mine, either in the smoker on very low heat. Can also be done in the oven. Or they can be dried in the sun. Now I am talking red ripe Chiles. After they are dried or smoked. I dry and smoke mine. Grind them and use them to cook with or put in a shaker for table use. You can also make pepper flakes by chopping them in a food processor. I do that also. I like pepper flakes in my sausage when I make it. CF

Can I freeze 'em somehow? ? jelp! We freeze ours. Cut them in half & remove membrane & seeds & freeze. We dont dehydrate them they are too meaty. Hot sauce..make your sauce & dice them & that should work. De-seeded of course. We make poppers out of them. Here is what we do.. Cut in half. De-seed & remove membrane. Mix cream cheese softened & add shredded cheddar cheese,blue cheese,fried diced bacon. Spoon cheese mixture into popper halves & dip in egg/milk wash. Make Ritz cracker crumbs with seasonings of your liking. Roll poppers in crumbs..Bake in a 375° oven for 45 min. or until golden brown. ENJOY!! We are in over load of Jalepenos..

JALAPENO MACARONI SALAD 12 oz. medium size macaroni shells or elbows, cooked and drained Fresh green onions --I use about 3 or 4 I also add a little sweet white onion to this, 4 jalapeno peppers (deseeded) and diced fine I use more because we like ours hot to the taste salt and pepper to taste garlic powder to taste (just a dash ) 1 pint Real Mayonnaise--make it good and moist Dice onions fine (I cut mine with the scissors) or chop onions and peppers till fine in a food processor. You want these in small pieces, not liquid. Mix all together and chill overnight. So good !

I have a bunch of Jalapeno's also I am going to make hot sauce ... I made some a couple of years ago. Do you think I can remember how I did it? NOPE! Any hoo I have smoked and roasted a few. Then I learned I should take the skins off.. Maby I will take the skins off 1st then roast and smoke them!! I am not quite sure yet! I will look into it and post the recipe I make. I have some lil jars I use , We have friends that LOVE the hot stuff so I may leave the seeds in there

dunno bout smokin them, They be hard to dehydrate tho because their walls are so thick...nothing like the super hots...they be paper thin

How come all the recipes I phound online say to make home made hot sauce add chopped up jalapenos to Franks hot sauce? ? Gah! doncha just hate recipes that base the whole thing around a store bought ingredient or a cake mix I do..as for Franks Hot sauce...if we run out of purchased bottles for our hot sauce..... we purchase Franks for 67 cents, DUMP IT DOWN THE DRAIN...wash-sanitize and use the bottle...
