I should have done this yesterday,but was caught up in doing other things. Just started the big box smoker up with some apple and hickory chips to smoke sausage that we made Wednesday, man it's cold. Ill have to preheat that box for an hour before I can start smoking sausage. I really wanted to try CF smoked pork but like bacon, and changed my mind and made sausage instead.....trouble is I would be the only one eatin the pork but and that's more then I need. At least Ruth likes smoked sausage so that will get ate over the winter. I love a lot of smoked meats that Ruth will not eat, and that's a problem since I need to watch my weight and my heart soooo......like it or not I have to do without all the good stuff. I look at all that good smoked meats that CF makes and my mouth just waters.

JC, awaiting photos so I can drool. I still need to make sausage. Got everything ready. Just not been feeling good. CF:)

I did something stupid yesterday when I was changing the racks around to make sure the sausage was getting smoked evenly. I grabbed the first rack with my bare hands and burned my left pointing finger real good....what a dumb azzz thing to do I don't know what I was thinking.
