1 Cup light oil. 2 room temp. egg yolks 3 Tbls, Acid like lemon or Vinegar (I used Rice vinegar) I just wanted plain Mayo so I didn't add any other spices.
When making your own Mayo you can do it with a hand whisk or a stick Blender.
Whisk Egg yolks and Acid together, slowly add oil like a table spoon at a time till it is emulsified with the whisk or blender ,then add another Tablespoon and so on till all the oil is gone. Oh my goodness it is very good. I used a stick blender.

The thing is Colorado you only make enuf to use. it won't last as long as regular mayo.

CO I think you can only keep it for 4 days but it never lasts that long.
