Holy Cow!!! Nice looking maters and eggplant!! How do y'all cook yours? I eggwash and bread in itallian breadcrumbs and quick fry(just enough to brown lightly) then put in a baking dish with TONS of cheese and diced tomatoes.

Dats a colorful plate of mators Spuds, and They hydro to boot, Correct? Tonya, I fix eggplant so many ways...the thing about the Rosa bianca eggplant (pictured) is they aren't bitter, and they are prolific. I usally dredge in flour, egg wash, and dredge in seasoned bread or cracker crumbs (whatever I got time to make) then have them for a meal, nd the leftovers go to a rich cheesy Parma....ummm, had that lust a couple days ago here's a sink fulla da pickins three days after the ones pictured above, all ready for us to process... by next spring Laura and I should be RED..from mator consumption

Thats my 'mater goal,to turn red too! VERY nice! I wont get that many I just dont have the room.Yep,those are all hydros except the Beefsteaks. ..........

We have another sink full of em to fix..Salsa..only a bit milder..also have a bucket of hot peppers to fix..
