When do I pick my Chamomile flowers to dry for tea? Can all Chamomile varieties be used for tea?

The flowers should be harvested when the petals begin to turn back toward the center, as for the roman/german varieties, I have always heard they could be, but there does seem to be some debate...the german variety though is the easiest ot harvest...it's like a weed tho, ifin you don't harvest it...we have it everywhere

Two species of chamomile are used medicinally - Roman chamomile (Chamaemelum nobile) and German chamomile (Matricaria recutita). Properties and applications of the two are virtually identical.
German chamomile is commonly known as "matricaria," referring to its role as a gynecological herb.
Harvest flowers thoughout summer when not wet with rain or dew.
