NEW YEARS BLACK - EYED PEA SOUP 3 rounded c. of dried black-eyed peas Ham bone with meat or ham hocks 3 c. celery, chopped 3 c. onions, chopped 3 c. carrots, sliced 2 lbs. smoked sausage 2 tbsp. chili powder
Cook peas in 3 quarts of water with ham bone until peas are soft. (No need to soak peas.) Discard bone. Add celery, onions and carrots. Cook for another hour. Add diced, smoked sausage and cook 30 minutes. Add chili powder. If needed, add more water, salt, or black pepper to taste. Serve with cornbread. Makes about 1 gallon.

yep, ya can't do it much better than this recipe bro Rita...I would add a bay leaf too... but then, I add a bay leaf to most any soup or stew.... reckon cause my Ma did...salt, pepper, and bay leaf was about the extent of seasonings used back home ...

The only thing I have is regular sausage so I'm using it. Think Ill cook it a little on the stove in a fry pan in bacon grease that may give it a little smoke taste. I'm cooking it today since I already soaked the beans last night.

I made that black eye pea soup yesterday with your recipe Ralph with a few changes.
I cut up some smoked bacon in little pieces and cooked that first then added the sausage and browned it, I removed most of the sausage leaving the drippings to saute the vegetables then put the sausage and bacon bits back with two smoked hocks....added the liquid and peas brought everything to a boil and simmered for 45 min. and it was perfect, OH and added chilly powder and that was it. Ruth made buttermilk biscuits and Johnny cakes. Man was that ever great. ;D
