OK I had to make this thread because It took me a while to find the other one because it was in the SWEET'S... Now I have this one I can make a list of stuff I like that is Gluten free You ask what is Gluten? Here it is... en.wikipedia.org/wiki/Gluten I happen to have Celiac disease, That makes me Celiac , Celiac is this digestive.niddk.nih.gov/ddiseases/pubs/celiac/#whatThat means I have to have Gluten free meals not a problem for me. Just a lil more pricy! LOL

So tonight I made Tuna Noodle Casserole , I used Rice noodles, Gluten Free , Cream of Mushroom soup, some hard cheese. It was very good! I made a big batch and we ate half of it! So I guess It must of been good!!

Gluten free flour
1 C white rice flour 1 C oat flour 1 C coconut flour 1 C tapioca flour/starch 1/4 C cornstarch 3 1/2 tsp. xantham gum
Instructions
Combine all ingredients together and make sure they are mixed well. Store in an airtight container and use as flour in any baking recipe.
Of course since you can't have corn products also you can use arrowroot instead

THanks Rita I do look up some recipes But yea alot of Gluten free has corn products but I have learned to either put something eles in or just eliminate the corn product. I have NOT gone to food dot com tho Looking forward to looking thru it! Tonight we had a big fat roast I cooked in the oven. I had some rice , beans and a veggie all mixed together for a side. Hubbs fried some apples and mixed it with the meat! He had plain rice with his sandwich , I had the beef mix with my rice .. OMG it was so very good! Yummy!

There are several reasons I use food.com < used to be called recipezaar they have a great site .. if your looking for just about anything it will be there .. They also have a forum .. if your looking for Gluten free .. its there .. When my father in law had his stroke .. he was on a special diet .. can't remember what it was called now (probably colorless tasteless yuck) .. but it was there .. refined foods or something like that .. But the forum is kinda hard to find www.food.com/bb/index.zsp I know there is an area for this type of diet .. whats nice tho ... is there are real people that actually taste the food and can give you tips

Well I made my split pea thing... sometimes I don't get people who post recipes that don't work! 1st it took twice the amount of water, 2nd it made 3 not 7 of the pita like things. But they tasted like un cooked peas. Noo I will not try those again ...

Split Peas soak up a lot of water during the cook time..which takes a spell if you do them like me and don't soak them first I like them soft..NOT MUSHY.....so it's a couple hours of cook time at least..the only way they aren't done in this amount of time is if ya forget and salt them before they are soft to your desire..or anything acidic like (lemon juice, lime juice,liquid smoke, etc.)

I always go by the rule of thumb: 1 cup beans to 3 cups water..but quite often you do have to add more water...

Like corn tortillas, these become pliable when heated. Pop them in the microwave or warm them in a dry skillet before using. If you like crispy edges, add a little oil to the pan when reheating. INGREDIENTS: 3/4 cup yellow split peas 1/4 cup long-grain white rice 1/4 teaspoon salt 1/2 cup water oil for the pan DIRECTIONS: Cover the split peas and rice with 2 inches of water. Cover and set aside on the counter overnight. Drain the peas and rice, then put them into the bowl of a food processor. Add the salt, then process until the mixture is finely chopped, scraping down the sides of the bowl as necessary. With the motor running, gradually pour in ½ cup water. Scrape down the sides of the bowl, then continue to process for 3 minutes. The batter should be the consistency of pancake batter (but grainy). If it’s too thick, stir in a spoonful or more of water. Heat a skillet over medium heat. Once hot, add a thin layer of oil. Pour in 1/3 cup of the batter, then spread it around with a rubber spatula until you have a 7-inch tortilla. Cook for 1-2 minutes, until the tortilla is golden around the edges. Flip and cook 30 seconds to 1 minute more, until bottom side is lightly freckled. Remove from the pan, then repeat the process for the remaining batter. Yield: 7 tortillas

Remember the Galloping Gourmet on TV? He had a mushroom pie,with Filet Mignon,thing cost a billion dollars to make.Mom and Dad made it,it was HORRIBLE,dog wouldnt touch it.LOL,looks good though. Or the lumberjacks,if you complained,you had to cook until next person complained,then he had to take over. So guy stuck cooking and tired of it,but nobody complains.So he decides,and does,make a moose turd pie.Serves it up.....Guy takes a bite, thunders out,WHY THATS A MOOSE TURD PIE!!!!! Everybody looks at him....,to which he quietly replies....dam good moose turd pie though....

Moose turd pie...
The only thing they don't hire is a cook That's because they're cheap; saves them money. The rule is that in the crew they're supposed to pick among their own members, who's going to be the cook. They don't try to do this sensibly, like draw lots or decide who the best cook is. What they do is wait to find out who bitches and whines and pisses and moans the most about the cooking, and they say "all right wise-guy, you think you can do better, you get to be the cook". Well, that was me, see! Ol' alligator mouth, new man on the crew ; and that was the worst food I'd ever had. I mean it was dog bottom pie and pheasant sweat, otter water, comes out of an otter; terrible terrible stuff. Some people think that's a delicacy, but I thought it was garbage. So I complained, so they said "ok, wiseguy, you get to be the cook". That made me mad! Because I didn't want to cook, but I knew if anybody complained about my cooking, they were going to have to cook.
Armed with that knowledge, I sallied forth over the muddy river. I was walking around among the sheet grass and the bunch grass, and I looked down, and there was just a hell of a big moose turd. Biggest damn moose turd; that was a real steamer! I looked down at that meadow wafer, and I said to myself "Self, I'm going to bake up a big moose turd pie." Because if anybody complained about my cooking, they were going to have to cook. So I tipped that pasture pastry up on edge. I got my shit together, so to speak. And I started rolling it down towards the old cook car. BALUUMP! BALUUMP! I got it down there and leaned it up against the side and I climbed up in the cook car, and I baked a hell of a big pie shell. And I baked that moose turd in as slick as you please. And I cribbed it with my thumbs, and laid strips of dough across it, & garnished it with a sprig of parsley, a little paprika. It was beautiful; poetry on a plate. And I served it up for dessert, waiting for the first hint of a complaint. Well, this giant dude comes in, about 5 foot 40; I mean he was big. Throwed himself down like a fool on a stool. Picked up his fork. Took a big bite of that moose turd pie. Well, he threw down his fork, and he let out a bellow, and he yelled.. "My God! That's Moose Turd Pie! ... It's Good, Though!"

Well theres this one but it's not the one I made
Wonder Bun yield: one 3 ½ inch bun
ingredients
1 large egg 4 tablespoons almond meal ½ teaspoon baking powder ½ teaspoon cocoa powder a pinch of salt, optional 1 teaspoon sesame seeds
In a small bowl, beat the egg with a fork, for about a minute. In another small bowl, add the almond meal, baking powder, and cocoa powder. Add a pinch of salt if you like. Make sure everything is thoroughly mixed so you do not see little balls of cocoa or bitter baking powder. Add the eggs to the dry ingredients, stir until smooth. Oil a 10 oz Pyrex custard cup and sprinkle sesame seeds on the bottom and sides. Pour the batter into the cup. Top with more sesame seeds. Microwave for 90 seconds. That is it! A ready to eat, tasty bun. A wonder bun!

1/3 cup almond flour 1 tablespoon chia bran (or flax meal or coconut flour) 1/2 teaspoon baking powder 1/8 teaspoon salt 1 egg, whisked 2 and 1/2 tablespoons butter (or coconut or olive oil), melted Instructions
Grease a mug. Mix together all the ingredients with a fork. Pour mixture into mug. Microwave for 90 seconds on high. Cool for a few minutes. Pop out of mug gently and slice.

It was kinda like this one only in a cup. I actually kinda like this one. Not sure why the Flax meal , I'd just go with the Almond meal. Maby a lil sugar or garlic if you wanted garlic bread..
What you need: 1 egg 2 tablespoons melted butter or coconut oil 1 teaspoon baking powder 1/4 cup combination of almond meal & flax meal – I’ve been using two tablespoons of each. I do NOT recommend using the full 1/4 cup of flax only, & don’t even bother trying out coconut. I tried with one tablespoon coconut, two tablespoons of almond meal, & one tablespoon of flax, & it just didn’t really work. How to do it: Mix everything together, then pour into a square glass dish. Spread evenly. Microwave for 90-100 seconds. Cut into four squares (I use a silicon spatula) & flip out of pan. Allow to cool for a few minutes, then doctor it as you like!

I usually eat some scrambled eggs in the morning Sometimes I have some left overs from dinner for lunch. or I skip lunch. Dinners are usually a meat and vegetable or meat and rice or potatoes.

A friend of mine gave me this recipe I have to put it here so it can be saved Buns altho she said she doesn't put stevia in it. I won't either Gluten free flax seed buns 1/2 cup plus 1 tablespoon flax meal 1 1/2 teaspoons onion powder (opt) 1 tsp caraway seeds (opt) 1/2 tsp salt 3/4 teaspoon baking powder drop or 2 of stevia 3 eggs 1 1/2 tablespoons water 1 1/2 tablespoons olive oil Mix the dry ingredients; add eggs, water and oil. Pour the batter into 6 greased muffin top pans. Bake at 325º 15-20 minutes. To serve, split the buns horizontally to make two halves using a long, thin knife. Makes 6 servings Can be frozen
