how do you keep the charcoal from getting too hot? Or maybe I don't understand the process.

This is the way we like garbanzos, well one of the ways. CF The real hummus Recipe: 15 oz can of garbanzo beans, drain 3/4 of the liquid in the can but save the rest 1/3 cup lemon juice, fresh works best but bottled is okay too 4 Tbsp tahini (sesame paste) 3 cloves of garlic, lightly chopped 1 tsp salt 1 Tbsp ground cumin (These are more like guidelines for this recipe… you really have to taste it and adjust it to what you like. If you like it more garlicky add more garlic, if you like it less lemony, decrease the lemon, etc.) Instructions: Combine all of the ingredients in a food processor until they are smooth. Enjoy! To make this hummus extra fancy garnish with a little bit of extra virgin olive oil, some pine nuts, and some paprika like I did! Beautiful! Thanks for the recipe! Love it!

Made some spaghetti sauce for Dave some spaghetti, I had some rice, Lentle and some Chia seeds all mixed up, I threw some spaghetti sauce over it and made my self a great new dinner! It was really good! Of course it was my canned tomatoes I used for the sauce, cannot ruin that!

Its a covered barrel,cant get over 300F or so unless you crack the lid to let in more oxygen.Will do a 6-8 hour cook with 8 lbs charcoal.Thats a lot of cooking,and it takes very little tending to as it cooks.And holds a ton of meat. Best chicken and best ribs weve ever made. As CF says,its a UDS,wish I learned of this many years ago,it makes you the King of BBQ with almost no learning curve,its really rather foolproof,its just learning the cooking times so you dont overcook.And that learning curve is really quick.After 3 cooks on ribs Ive got it nailed,and there are others who are flat out artists with them.

I watched a bit of Pioneer Woman yesterday so today I'm cooking what she was making; filet mignon started on the stove top and finished in the oven with asparagus and shrimp. It's been years since I've cooked a steak indoors so we'll see how this turns out. She put a hollandaise sauce on her steak but Johnny won't eat it so I'm not going to the trouble to make it. I can do without it too.

Sirloin Pork Chop and hash browned potatoes, browned on stove then finished in the oven and Bushes Best country style beans. Potatoes are an (accidental) experiment. They are from my 2013 garden and have been in my fridge ever since. Yukon Gold and they are still in fine shape ! I learned a long time ago they keep a long time in the fridge but have never kept any that long. Kinda forgot about them back in the corner. This year I grew Red Pontiac and am going to purposely save a few to see how long they will keep.
