w8in, there used to be a restaurant in town where we'd go every Saturday. The owner was getting thinner and thinner and looking sicker and sicker and older and older. She always told us she was so tired and exhausted. We thought it was just because she had to work long hours being in the food industry. Come to find out she has celiac disease. It took a while for her to get it under control and she ended up closing her restaurant but she finally got a lot better. Wow! Yea It does suck the energy out of you! Wow I cannot imagine what she felt like. Wouldn't you love to run into her and find out how she is doing? I know I am alot better It will be two years in June. I am still learning.. And still healing!

Last night I made the Pioneer Woman's beef stew. It was great. It calls for a can of beer and dumbo me, having never bought beer, went to the Harris Teeter Supermarket to get a can of beer only to find out I can only buy it in a 6 pack. Knowing that we'd never use 6 beers I didn't buy a 6 pack and decided to stop at a convenience store to see if they had single cans and, of course, they did.

I had Chicken balls last night, also used my vegetti thing and made some fried squash! It was yummy! Dave had umm well lets call it suppertrash He had left overs but he mixes it all together, Hot dogs he cut up, Tuna casserole he threw in there, Some left over potatoes he cut up, added onions, then threw some chili sauce over the whole deal, he is disgusting! I told him if he gets sick it is his own fault!

We had fish (caught with a silver hook)hdsk I made 2 baguettes and a sponge cake to have today..( have cherry juice..that I will reduce to top it)WRENNIEI guess the spell check don't know what a baguette is either But I do..and I also know what a Latke is hdsk

Got some steaks out of the freezer for tonight. We are gonna take a Tri-tip outa the freezer, Put some tasty rub on it..and have that tomorrow.... today is still kinda undecided... Maybe some pasta and a nice homemade marinara... (which if we have this..I better get some Mators simmerin')I made Us Chicken Alfredo from scratch the other night..and I must say.. It ROCKED!! 2706 assuming Laura thought so to because she almost ate her plate and scraped the last bits into her lunch container....

We had Pork chops last night I had a salad with mine and Dave had Mac and Cheese with his. Even tho we had pork last night I think either left overs tonight or I want to make a Rosemary and Garlic pork shoulder roast. I seen it on the show " Best thing I ever made" Love that show! As long as it's an easy recipe!

Laura wish we could get tri-tip here. No one here knows what it is. You can get them in Dallas. Oh the joys of living in a small town with wal-mart. Thats, ok better than living in the city. Guess I will just have to eat rib eye. CF

CF They have them at one local market quite often..store name is Cash Wise... a local meat market has them.. they are Freakin EXPENSIVE there, but they have already had a rub (different rubs) added...average about 28 bux.. the same size tri-tip..from the store I mentioned are about 15 bux.. with a much better- WAYYY less salt rub mixed and applied by Me...that way I can throw a lil Kicker-roo of heat hdsk CF, I have driven through the town where the meat market is, in the wee hours of the morning..and the "source" of the meat he uses comes from NO NAME Meats...seen the truck backed up to the door! so, don't know where all No names go...It's a Minnesota company but around here it's a synonym for sub-par meat...so. I'll stick with store bought and a good rubbin' here at home

Tonight I am making Shrimp Casserole , I am going to make it a lil different than the Recipe so It can be GF. This is the Recipe: 1 1/2 cups uncooked long-grain rice $ 1 1/2 pounds medium-size raw shrimp $ 1/2 cup butter $ 1 green bell pepper, chopped $ 1 onion, chopped $ 3 celery ribs, chopped $ 2 garlic cloves, minced 4 green onions, chopped 2 (10 3/4-oz.) cans cream of shrimp soup, undiluted* 1/4 teaspoon salt $ 1/4 teaspoon freshly ground pepper $ 1 cup (4 oz.) shredded Cheddar-colby cheese blend $ 1/4 cup fine, dry breadcrumbs See a Hawaiian Sweet & Sour Sausage Recipe Preparation 1. Prepare rice according to package directions. 2. Peel shrimp, and devein, if desired. 3. Melt butter in a large skillet over medium heat; add bell pepper and next 4 ingredients, and sauté 10 to 12 minutes or until tender. Stir in soup, shrimp, salt, and pepper; cook 3 minutes or just until shrimp turn pink. (Do not overcook.) 4. Combine shrimp mixture and rice. Pour mixture into a lightly greased 13- x 9-inch baking dish. Sprinkle evenly with 1 cup shredded cheese and 1/4 cup breadcrumbs. 5. Bake at 350° for 25 minutes or until cheese is melted. *2 (10 3/4-oz.) cans cream of celery soup, undiluted, may be substituted. Chicken-and-Rice Casserole: Substitute 3 cups chopped cooked chicken for shrimp and 2 (10 3/4-oz.) cans cream of chicken soup, undiluted, for cream of shrimp soup. Proceed with recipe as directed. I couldn't find any of their soup so I bought 2 cans of Progresso Clam chowder,It is Gluten Free. Only thing is they are ready to eat so not as thick. Thats ok I also bought Scallops, and Mushrooms to add I might just need to add extra cheese or some something also ... What ever it will be good! I also bought red pepper instead of green pepper, and of course no bread crumbs DAng it should of got some GF crackers!

The Seafood Casserole was very good I'd change it up a bit the next time. Less bell pepper and more garlic maybe a bit of Rosemary or something. But I went shopping Dave ate by him self , He ate half of the casserole! I'm like wow! He must of liked it!! And he did! He said it's a keeper! Tonight is another new one! I cannot see where it can be bad! I miss not having great home grown meat! Our twenty lb chickens and our 40 lb. turkeys! Yumm! We used to get our beef from a guy down the road. At one time we had 3 freezers down stairs. Bur with 3 kids here we were cooking alot! Now we are down to one freezer and it is filled with frozen potatoes and pizza! Sad sad sad!

Spaghetti tonight. I put red wine in the sauce and a tiny bit of onion. Don't mention it to Johnny please or he won't eat any more of it. Eats it and likes it as long as he doesn't know.

My pork was ok, taste was there but it didn't brown up like I thought it would even tho I cooked it in the oven w/o a lid. But that GF gravy was pretty salty! Never get that again! Make my own 1st.
Bof mums the word here!! sounds yummy! Isn't that funny! Eats it and likes it as long as he doesn't know! LOL Is it the wine or the Onion he doesn't like? Or both? Thats funny!

Well we have been eating a bit leaner, and our portion size has been reduced.. Both good things.. Tonight ..we are grilling a nice steak, with yet to be considered sides... we will have about 4 oz, of meat each.... seems to be working ..we have been tightening up the ol belts
