I've been really loading up on the cucumbers dipped in ranch dip made with 0% milk and light mayo. I've lost weight just from doing that for lunch!
Is there any particulsr nutritional benefit to cucumbers that you all know of??

Song, Cucumbers, although they taste is so incredibly good, .. each cuke is 90-95% water! so you are eating water and ranch dressing...sounds pretty darn healthy too me Not only are You increasing your water intake... cucumbers are a good source of vitamins A, C, folic acid. T the peelin is rich in fiber/minerals including magnesium, *silica, molybdenum, and potassium. *silica is a trace mineral that adds strength to our connective tissue, and Cukes have a good amount of this!!

Silica is also really great for hair and nails! Although, please don't take this the wrong way, it would be a more "nourishing" snack with whole milk and different mayo. Of course, this thread is about cukes, so I'll post elsewhere about that . Cucumbers are on the list of highly sprayed produce so it's best to by organic cukes even if you don't normally buy organic produce. Even better if you buy from U.S. sources. Fermented cucumbers are able to dissolve precipitates of uric acid which helps prevent the formation of stones when eaten along side meats and sausages. See the Pickles! thread.

I love cucumbers and plan on growing my own. They are hard to find here rt now. They are all swiveled. I have been drinking cucumber,lemon water. It is great. Supposed to be healthy and help with wt loss. I can't tell that I've lost any wt but I like the taste of it, so I will keep drinking it and hopefully, when Spring finally gets here, I will be able to walk and hike more and maybe some of the wt will come off.

Lucy do you have a coop or a health foods store there? You pay more, but the produce is typically much nicer..because it comes from folks who care?? dunno, but produce anywhere else here in the winter..pretty much sux..

Also if your cukes are shiny when you buy them make sure you scrub them!! That is wax they put on them!! I hate that!! Why do they waste their time? Well I really know why ... But I wish the didn't!! Sometimes we cannot get Organic around here... at least at this time of year.

And it sucks. The cucumbers are either tiny or huge and the lemon rinds are so thick, there's not much middle to them.
