Made with canned foods.Makes 2 servings 8 oz Refried beans- 8 oz 90% ground beef-salt and pepper 2 oz portabella mushroom slices-chopped 2 oz Jack cheese shredded 12 black olives, halved 2 TBS salsa 2 TBS low fat sour cream shredded iceberg lettuce Couple jalapeno slices Cook beef in cast iron pan, make chunky, when almost done add portabellas. Make 2 plates, add a base of shredded lettuce, add heated cooked refried beans and meat.Divide rest of ingredients and add to each plate. Makes a darn filling main course for about 500 calories.Apologize for bad picture, lightbulbs in kitchen add funky colors so doesnt look all that great. But you get meat, beans, veggies and dairy. However,it comes out excellent, this is a keeper.
