Servings: 2 • 2 medium sweet potatoes • Olive oil cooking spray • Kosher salt • Fresh ground black pepper • Optional seasoning like cinnamon, chili powder
Cut peeled potatoes into 1/4 inch strips and spread them in a single layer on a baking sheet* coated with cooking oil spray. Mist the fries with cooking oil spray and season with salt, black pepper, or any other seasonings - ground cinnamon, curry powder, and chili powder are all good options.
Bake in a 400 degree oven for 20 minutes, flipping the fries halfway through. For extra crispy fries finish under the broiler for 5 minutes.
* COOKS NOTE: For easy clean up and no sticking, cover baking sheet with nonstick release foil.

Well I made 1 good serving of these fries, and wish that i had made more. The mixture, of the black paper cinnamon and salt was good. I could have cooked them for more than 18 minutes to crisp them up but i could not wait any longer. I also topped, them with a bit of chinese salt.

Chinese Salt? Is that different than regular Table salt we use here in the good ol USA?

Crispy Sweet Potato Fries (Weight Watchers)
2 lbs large sweet potatoes, scrubbed 1 tablespoon olive oil 1/4 teaspoon salt 1/4 teaspoon fresh ground pepper
1. Preheat oven to 450 degrees. 2. Half the potatoes, then cut into 1/2 inch wedges. 3. Toss with oil, salt and pepper in medium bowl. 4. Arrange the potatoes in a single layer on a nonstick baking sheet. 5. Bake, turning once, until browned and crisp, about 35 minutes.
------------- Spicy Baked Sweet Potato Fries
INGREDIENTS
* 6 sweet potatoes, cut into French fries * 2 tablespoons canola oil * 3 tablespoons taco seasoning mix * 1/4 teaspoon cayenne pepper
DIRECTIONS
1. Preheat the oven to 425 degrees F (220 degrees C). 2. In a plastic bag, combine the sweet potatoes, canola oil, taco seasoning, and cayenne pepper. Close and shake the bag until the fries are evenly coated. Spread the fries out in a single layer on two large baking sheets. 3. Bake for 30 minutes, or until crispy and brown on one side. Turn the fries over using a spatula, and cook for another 30 minutes, or until they are all crispy on the outside and tender inside. Thinner fries may not take as long.

Note: Watch Sweet Potato Fries more closely than ordinary potatoes -- the high natural sugar content burns more quickly and easily.
