I have a cousin who grows and sells ACRES of collards. Went to see him today and he gave us 12 bundles of collards. He measures his bundles by how many plants he can wrap his arms around, so they are pretty big. We got back home (we had rode with my brother and sis-in-law, who happens to be da honey's sister). All four of us sat at our kitchen table , stripping leaves off the stalks and removing the stems. We had three 13 gallon trash bags of stalks and stems (to go to da compost pile). Then bro and sis-in-law went home. The pic below is nothing but collard leaves before we started washing, blanching and putting into freezer bags. Da honey and I washed, rinsed, blanched (well - we did cook one pot for supper, along with some durn good turnip roots ) We've still got a little less than half of the leaves to go - they're spread out on a sheet and it's cool tonight, so they'll be okay until tomorrow. This ol' Georgia boy is plumb tuckered, and so is da Honey! oh, and by the way - my cousin does all his crops organically - we found no bugs or worms on any of the plants.

Only trouble is the photo is too dark for me to see what's init.

I modified the post and lightened the photo - it was a bit on the dark side the first time for some reason ! and by the way, that pile is about 8 feet long and about two feet high - a LOT of collard leaves - but they freeze well and taste ohhhhhh so good !!!!!

Man those look good oob...........i have a friend up north and his ole lady would make ox tails and collards.......yummm

Those look mighty fine there OOB, and so good during those months we don't get frost to sweeten them up. Over the week end I cooked some rutabega's with the leaves I had put up back in March of last year, tasty as ever. trudy

I just had some with dinner tonight (deer steak , collard greens and bacon with cornbread) ! OOB i hope your savin that pot liquor ? Collard Green Risotto and Pot LiquorOr you can also pour it on the compost pile the critters will love it as much as you like the collard greens if that's possable!

Yep - definitely savin da "pot likker"!!!! That's some good stuff right thar - how do you think I got all this bear hair? It's so chock full of vitamins and minerals it would probably grow hair on a bowling ball....
