Guy's y'all are thinking that I grew these apricots, I didn't. They are from California, one of our produce vender's gave them to us. I just don't want any to go bad. I know we can't eat them all fresh. We can't grow them here either, they bloom way to early. CF

Dehydrate some if you can, they are drier than commercial but I like it just fine, use a little vitamin c powder or lime juice for a quick soak before drying.Im loving em.

Got them all done, I did lose a few but not many. I cut them in half, added the sugar and lemon juice. let them sit in the cooler over night. Dumped them in a heavy pot, added 1 box of pectin. Cooked on low heat until they were pretty thick. The fruit cooked all apart. Bottled and cooled. not as thick as I wanted but taste really good. CF
