Dang! It _IS_ time for squirrels. I can't believe how fast this year has gone by. Ginseng opened 15th too here. I won't be hunting either one, probably ever again, but I can say I gave it hell when I was able. ;D

Squirrel season doesn't open here until Oct. 1st. I won't have to go far, I counted 14 that I could see at one time here in the yard. They should be in good shape, been feeding them sunflower seed all year. Nope, wont be killing my yard squirrels. But will be going to hunt. We have both fox and cat squirrels. (red and gray) I love squirrel and gravy. CF Just wanted to add, squirrel and dumplings isn't bad either.

I love squirrel gravy....have'nt had it in a long time, great stuff. I can't get out and walk to hunt, but i sure can go in the back, pour out about 10 pounds of corn, back off and just wait for'em to come We have grey's, red's and fox....our fox squirrel's are about the size of a house cat.

My 12 year old loves squirrel hunting so we get quite a few here is our recipe for canning them
Canned squirrel 2 stalks of celery 1 onion chopped 2 garlic cloves minced a small bunch of 3or 4 sprigs of each of these thyme,rosemary,garlic chives tied togeather with a string bring to a boil in 1 gallon of water simmer all until vegetables are cooked well,strain out herb bundle
Dress a squirrel and wash really well.Cut into pieces about 4 and pack into 1 quart canning jars,pour broth over the meat to fill to the neck of the jar,add 1 teaspoon of canning salt. process at 10#'s pressure for 1 1/2 hour.
When you want to eat the meat,strip from the bones,make gravy from broth or thow all into a crock pot or make squirrel pot pie by thincking the broth and adding peas,corn ,potato's,and carrots.

GH, I love canned meat. We canned goat, beef and fish. Never canned squirrel, or rabbit. We just walk out back and get one when needed. Course pork was always cured. I guess from reading my post you can tell we had no electric power. But we sure ate good. I still have my grandmothers pressure canner and can sealer. CF

Well drag it out Chili farmer and put it to use!!! We ahd Amish friends in Michigan that were no eletric and i only wish i could get set up like that again. Then day's that my health really dives I'm gald that is not the case.
Yes,i can meat all of it ,fish,goat,duck,chicken,rabbit,cow,pork,goose,and even ratcoon. My son is a huntin loven boy and the way i figure it he could be wanting to do bad things so when ever i get more then enough we can for those crazy busy days. all cooked just have to heat it up so i grab a can of soup,or meat and in 25 minutes supper is ready at the most,soup and beans even faster! What is your favorite recipe for meat? Isaac loves BBQ rabbit and squirrel best.

GH, depends on the meat, fish was mostly made into fried fish balls. It could also be used like canned tuna. But the best ever was goat, rabbit or squirrel. Warm meat and juice in skillet, remove meat, Make milk gravy from the juice. Serve with buttermilk biscuits. Maybe some fresh peas for a side dish. Now thats a supper. CF

Gidday What are squirrel like to eat? kinda hard to describe Jack, to me if prepared right, beef... kinda depends on what the squirrel has been eating...squirrels living and eating in a pine forest would taste different than one living and eating in a hardwood forest with lots of nut trees And...the squirrel...first, ya want a yearling... the older ones can be eaten, but they are mighty tough... most eat the legs only...some eat the whole thang... I like them fried and make some gravey...umm, umm, yum so, summing it up...Eat a young squirrel that's been eating corn/grain or nuts like dem lil bastards eating outa your bird feeders....

Our's taste like chicken meat.They only have nuts and some corn sometimes that my son feeds them.Squirrels here in Florida are way smaller then in Michigan by far! they are a great lean protein meal,we pressure cook the old ones in homemade stock. But we eat squirrel stew,BBQ squirrel.fried squirrel,baked squirrel,grilled squirrel,crock pot squirrel,pot pie squirrel and campfire roasted in tin foil squirrel.
