This is an absolutly wonderful recipe!! I made 2 1/2 pints today it says 3/5 pints I cooked mine down pretty good and it made 2 1/2 pints Tomato Jam Makes between 3 and 5 pints, depending on what kind of tomatoes you use and how long you reduce it Ingredients * 5 pounds firm, ripe tomatoes, finely chopped (3 or 4 cups of chopped tomatoes) * 3 1/2 cups sugar * 8 tablespoons lime juice (I used lemon , it's what I had on hand) * 2 teaspoons freshly grated ginger * 1 teaspoon cinnamon * 1/2 teaspoon ground cloves * 1 tablespoon salt * 1 tablespoon red chili flakes Directions 1. Combine all the ingredients in a large, non-reactive pot. Bring to a boil and then reduce the temperature to a simmer. Stirring regularly, simmer the jam until it reduces to a sticky, jammy mess. This will take between 1 and 1 1/2 hours, depending on how high you keep your heat. 2. When the jam has cooked down sufficiently, remove it from the heat and fill the jars, leaving 1/4 inch of head space. Wipe the rims with a clean, damp paper towel, apply the lids and twist on the rings. Process in a boiling water canner for 20 minutes. 3. When time is up, remove jars from water bath and allow them to cool. When the jars are cool enough to handle, test the seals. Store the jars in a cool, dark place for up to one year. Not the best pic but it is a very good recipe! Very rich spicy and sweet!!

It is a really good recipe! I let it cook down quite a bit! It is sweet and aromatic with that ginger in it wow!! We made some Pulled pork, I thought it would be perfect on that but we already had other plans for it.

Well we just ate it with chips like salsa or you can put it on crackers OMG you have so got to try this recipe You will do something with it it would be good on a roast alo on burgers or in a meat loaf.

We made it too,its soooooooo good,we used up our green toms in it.Yes,its hard to believe and we love getting folks to eat it,also surprises the heck outta them,the kids loved it.
we use it on toast,english muffins mostly.
Anyone who likes jams,and esp. who can,will love this,its that exceptional.

I think I am going to make some of this tonight to take to the grad party this weekend. I know my friends LOVE this stuff! We went over to their house one night and took some. OMG they fell in love with it!

No prob ChiliFarmer, you have a different recipe?? Of course your more than welcome to share . Bestofour it is delicious! My house is filled with the aroma!! I am actually roasting it to cook it down. I think a crock pot would work also. I don't think it is for everyday stuff. But for a party or get together it is really good! Altho I could eat it with a spoon

Yup,if I get green maters making this again,sure was good. 2706 I had a friend from out of town come over and I was telling her everything I was canning. She said yea I tried to can Tomato Jam before but it didn't set. I said what? Well here she tried to use sure jell like she was making Jam. I said oh no no no... Sweetie you make it like this and I gave her a jar. Lol Believe me I will know when she eats it! I'll get a phone call
