Anyone here tap trees for syrup? We have one mature birch tree near our house that I stuck a tapping device into yesterday; and I'm now hoping for the best.

They do a lot of maple here but I have never tried YET we do plan to when we get more land agree Keep us posted on your progress

Well, here it is: I got a wee bit of birch syrup, maybe 1/2 a cup, since the ratio of sap to final product is about 1:100. I was careful to not overboil, etc. Tried to follow the rules.
The taste is strong and not very good. A kind of smoky taste. I don't know what I am going to do with my birch syrup, I really don't.

I was going to but I didn't, Dave was all about it till it came right down to it! Then he said well I want to check to see if it will harm my trees! Ticked me off! Next year I will tap em!

I'm no help on this.....we always grew sugar cane to make sorgum.

My Buddy tapped his, He just stuck a tap in to see if it would work and bam!! Sap started pouring out! He gave all his sap to his sister in law. OMG the syrup they created tasted like Mrs. Butterworths. Thats the taste they were going for. It was lighter in color and very thick! It was good!! So I say Pfftt! On Dave! I'm tapping!!
