Harlan County, Kentucky (WYMT) - Thousands will make their way out to Harlan this weekend for the 60th annual Poke Sallet Festival. If you are not aware, Poke Sallet is actually a type of food and is a huge part of Harlan County's past. Officials say the festival is a great way for the area to hold onto that heritage. www.wkyt.com/wymt/home/headlines/Poke-Sallet-Festival-honors-Harlan-County-tradition-306298251.htmlPoke Salad 4 quarts young tender poke shoots 1/4 cup bacon drippings 1/4 teaspoon salt 3 eggs Wash poke shoots well. Place in a large kettle with water to coveer and bring to a boil. Drain. Cover again with water, bring to a boil, and cook for another 20 minutes. Drain well. Place in a cast-iron frying pan with bacon drippings and salt. Cook at medium heat for 30 minutes. Add eggs and stir until eggs are done, Serve with corn bread and green onions.

Lots of poke growing here. All stages of growth right now. Haven't eaten any in a good while. Wife doesn't care for it, me I like most all greens with cornbread and pot liquor. Course you got to have a tall glass of sweet milk. Cavey your recipe is one that I have eaten many times, makes me homesick. Thanks Man. CF

We have always looked forward to spring....after go'in all winter without fresh greens it was a blessin to go pick all the good stuff nature gave us hdsk
