We can and freeze our extras. So far we have canned 14 quarts of chard. 31 pints beets 5 pints baby carrots and have froze 4 gallon bags snow peas 8 gallon bags Broccolli 1 gallon baby carrots 2 gallons chopped onions 4 heads cabbage It all helps to keep us outa the grocery store in the winter. Pulled the last of the spring beets this morning and looking for a place to plants some more for table use this fall, My husbands favorite is home canned beef stew with our carrots potatoes and onions. The summer squash is best in frozen bake bread , relish and pickles with lots of Habenero peppers and onions.
I grow green onions very close together and don't thin, they mature small and look very good in pickle jars. late planted onions are also smal when they mature. Pickled with green beans and other veggies they go great with winter salads. No dought this is the busiest time of the year.

Gosh, I haven't had a garden in 18 years, y'all are making me miss it!! I used to make the best pickled beets! Oh, and the strawberry and raspberry jam...hmmmm, wonder if I'll be able to grow anything in AL with their clay soil?

Sure ya will, DAP!! We have clay soil here. I'm a big believer in layer mulching clay soil to break it down and build it up ( ) yes, really!!

I am starting beans and peas. And have lettuce growing under a shade tarp. My tomatoes finally have some nie green tomatoes. But as hot as it is I don't know how those plants are making it out there. I love those Bannana peppers they always have some thing for me when the other peppers are just thinking about making peppers.

DAP, the best thing I found to break up clay is compost. Every year, this is my 3rd year, I till in about 6 inches of compost. I do it in the fall, because it is not finished. It finishes decomposting over winter and in the spring the garden spot is ready to plant. Down here in Texas, we have to start our gardens in mid to late March do to the hot summers. My tomatoes are starting to dry up. I must have picked about 50 - 75 lbs from 6 plants. Even the neighbors are getting tired all the maters and cucs I have given them.

Y'alls gardens sound so wonderful! Next year, I'm expanding my garden, and I'm planting more veggies! I only have cukes, re onions, and maters, and a few herbs. I went small cuz I didn't know if we'd have a summer like last year or if it would be warmer this summer. Last year I had nothing ripe, and then we had a frost , so that was the end of the garden. Y'all have encouraged me to plant more next year!

I was all ready to re-plant, expand and whatever, but now my soil and compost has this virus!! Phil says I need to start a new compost hole, and that I need to cover the ground with plastic all winter to kill whatever is infesting it!

someone will have to explain this concept to me. I have six mouths to feed. two grown daughters, hubby and 2 gkids. what is too much food? I can, freeze, dry everything I can get my hands on. I have a huge freezer for veggies and another one for meat. too much food pays the electric bill hehehe
