Last night we had Rabbit!! Yummy!! I usually don't like rabbit. I think every time I have tried it , it wasn't quite done. This was friend and it was really good!!

Tonight we are BBQing honey garlic sausages, and having a salad/s. All the pictures of the seafood, that's one thing I cant eat, any of it , I've tried and it doesn't end well for me at all. I'm a cheap date at Red Lobster

Rabbit is GREAT,ate a lot of em,home grown,YUMM!!!!!!!!!! I like rabbit, domestic is OK, my folks used to raise rabbits for sale..live and dressed..a young wild one, in my opinion, is better...kinda like catfish, Ya eat one at a restaurant, they taste sorta bland and mushy..dats because they are pond raised...Ya taste one that's been out in the open water..fighting the currents..then the fish is firm and tasty...or at least ImO

Spuds: Rabbit,Pheasant,Squirrel,and Quail were a main stay for us back in the early 50s threw the winter. November 9th started the small game season and some time in December for One week there was Deer season. If we were successful all season that would normally get us threw June as far as meat was concerned. Never found Rabbits with worms,but I was told that in summer they would have them and that is why the season was in the winter months. I enjoyed small game up to 2000 since then I haven't hunted or had any small game. My son still hunts deer and we do eat venison and I really enjoy it. I miss small game the way my Dad would cook it.

Rabbit is one of the best meats one can eat. Tame or wild. I like them both. very low in fat, all white meat (not dark red) low in cholesterol. The doe rabbit will produce her own weight 100 times per year in offspring's. In Europe rabbit is eaten often. Here in America not so much. I think each household should have a pen of rabbits. At present I don't, But have raised rabbits in the past. Commercial grower, we had over 90 does. CF

We had eggplant parm again tonight, that we had vac sealed last season. Tasted as good as the day we made it. We just got the last of the green house tomatoes tonight from Abes, and one zuccini.
Tomorrow we plan on making home made beans and smoked Ham Hocks. The beans are from last seasons picking. Got to plant more this spring only have six pints of dry beans left.

I love eggplant parm.. last year I started breading the eggplant..then baking ot on a cookie sheet for a few minutes on each side till browned.. the taste of the finished parm was Great and the flavors were less "muttled" by the greasey taste of frying the eggplant..dunno, worked for Us but having said that...reckon I never tasted a Bad Eggplant parm Jc, be those beans from Cavey?? them sure are good beans... dang bro..I may just havta phix Us up soma dem

Good chilly morning: 21° and sunny, we are on our way out to the car dealer for a recall on our car, something I'm not excited about.
Phil: those eggplant that you are breading and then roasting in the oven is a good way of doing it, and frankly better then dealing with the mess of frying with evoo.
The beans are from sustainable mountain aig. in KY, Ralph was the one who told me about them and I have been growing there beans ever since. They are the best beans I have ever grown or ate. Never had a problem with the germination...every bean ya plant comes up, not like the beans ya buy from the catalogs that tell ya you need to use something to help germination, and they still don't do that well. Yes bro those are the ones and they are GREAT!!

The beans came out great, we really made a bunch so we ate good and canned the rest. Six courts for latter in the winter. Making Minnistroni soup today for Thanks Giving and starting on the pies. We have home made sausage that I'm adding to the soup. Ruth found an 8# turkey brest last night at the market, we have it ready for smoking...it's marinating now. Dang ifin a smoked breast don't sound good..we'll have a smaller whole bird..daughters comin up with her fiance.. Supper tonight..dunno yet..need to think about it while I whup up some bread.. A girl we know raises lambs for butcher..we got a package of ribs from her..and a roast..That Roast was so good (glazed with our Apple Rosemary Jelly) that we almost ate the bone . But..we fixed them ribs Sunday..
Small, short (4")..very small (read: Suspiciously Small) and Gamey..way to gamey for lamb..especially a REALLY small one B-|like that dunno.. we fix lamb all the time..never had anything except mutton taste like that.. well actually I have had something like that..but it was WAY BETTER |
Still, I thought it a good thing to remind Laura that the girl also raises dtb

Phil: Ive had goat quite a few times, best way to treat goat meat is to marinate in vinegar salt and pepper.Then ya can season it any way you like. I love Lamb but Ruthie thinks there to cute to eat. Had a neighbor up the road that had a few Sheep, she offered to give us one of her Lambs.....until I said that it would make a good Easter dinner. dtb . That ended that! OH well some peoples just don't sees it my way when it comes to good eaten...yessir they just don't gets it!!

Ruth and I are making Tomato sauce today from our caned tomatoes,we haven't had pasta in quite a while. We have some home made sausage that we cooked last night that we can add to it to make gravy. I had some collard greens and neck bones that a friend brought over yesterday. Ruth won't touch it. She also brought over some more hogs head cheese that she made.

We still have plenty of leftovers,Ive been eating turkey sandwiches for lunch and Minastroni soup. I just finished a tea with Brandy and honey and two extra strength Excedrin...few went right to my head,think it may be beady time fer me. We have about seven quarts of tomato sauce to can tomorrow,had it for supper tonight with some sausage. I love home made sauce,come to think of it I love all homemade foods. Well I'm going to hit the sack before I start sluuuring my typing.
